Applesauce Cookies
We had several big old apple trees on the farm where I grew up. Apple-y desserts such as these soft cookies remind me so much of my Grandma Irene, who would take me to the garden in a wheelbarrow before I was old enough to walk there myself.
At the end of last summer, my brother gave me a bucket full of those farm apples. I made and froze several packets of unsweetened applesauce, so I was all ready to make these comfort cookies while social isolating at home.
Applesauce Cookies
1/2 cup soft butter
1 cup sugar
1 egg
2 cups flour
1 tsp baking soda
1/2 tsp cinnamon
1 cup applesauce
1 cup raisins
1. Cream butter and sugar well. Beat in egg until the batter is light and fluffy.
2. Sift together flour, baking soda and cinnamon. Mix into the batter.
3. Stir in applesauce and raisins.
4. Drop by small spoonfuls onto lightly greased cookie sheets. Bake at 400F for 10-12 minutes.
